Who has created this Miso, glazed aubergine recipe for us? Introducing, the self-taught home cook and Instagram sensation, Mrs Kath Symes. Miso glazed aubergine

This meat-free alternative is packed with a sweet, savoury umami flavour and you only need 5 ingredients. 

Serves 2: Difficulty / Easy. 

Ingredients

       2 Aubergines

       2 tbsp Miso paste

       1 tbsp runny honey

       1 tbsp light soy sauce

       1 tbsp olive oil

Prep: 5 Minutes 

  1. Preheat oven to 200C (fan) 
  2. Cut 2 aubergines in half (lengthways) and score the flesh so you have a diamond pattern being careful not to pierce the skin. 
  3. In a small bowl add 2 tbsp white miso paste, 1 tbsp runny honey, 1 tbsp light soy sauce, 1 tbsp olive oil and mix well. 

Cook: 40 Minutes

  1. Place the aubergine’s flesh side up on a baking tray lined with parchment paper and transfer to the oven. Cook for 20 minutes. 
  2. Remove from the oven, and with a spoon or pastry brush spread the miso mix to each one making sure they are nicely coated and you have got it into all the cuts. 
  3. Return to the oven for a further 20 minutes until they are nicely charred and sticky!

Simply serve with steamed rice, and garnish with a few roasted sesame seeds, pomegranate seeds, and finely chopped chives.
